I made ice cream sandwiches with clients this week. SO. Darn. Good. I made special shortbread cookies, blended vanilla ice cream with a few flavors (plum jam, instant espresso and dulce de leche). It was so much fun, the ladies had a blast.

But I'm reminded that you should make ice cream sandwiches once a week in the summer. Why not? Store bought cookies and a tub of vanilla with some sprinkles is all you need. Kids made enough for their own party.  Work fast, have a sheet pan in the freezer ready, make the sammies, coat with sprinkles and freeze them for two hours until they are firm.
